I had such a fun time making these candy corn cupcakes. It was quite possibly the simplest themed treat I’ve ever made.
I just used a boxed cake mix, canned frosting, and Americolor food coloring. If you bake often and have never tried Americolor food coloring stop what you’re doing and jump on over to amazon or something and buy some. It’s amazing! It creates great colors and mixes extremely easily.
First, I made the cake as directed. Once made, I divided the batter into two bowls. I colored the first orange and the second yellow (Americolor’s “Lemon Yellow”).
Next, I scooped the orange batter into the cupcake liners, and then I topped it with the yellow.
After the cakes cooled, I topped them with white frosting and
quickly devoured more than I’m willing to admit was finished!
In retrospect, I filled them a bit too much. The next time I make these I’ll probably fill them 1/3 of the way with orange and 1/3 with yellow. I think I put too much orange in, which prevented them from having a nicely delineated line between the colors. (They were gone way too quickly so no one seemed to mind).
